I'd like to say I don't fall victim to bulk-buy items at Sam's Club, but I do. It was such a good price! Needless to say, you'll probably see a lot of recipes that call for coconut oil on Hungry Gator Gal in the next year since I have a large supply.
First up - Paleo Oatless Oatmeal topped with coconut oil and blueberries. I also mixed a scoop of plant-based vanilla bean protein powder in for flavor and an extra protein punch.
I've seen different recipes for oatless oatmeal on various healthy living blogs for a while and decided it was time to try it. I'm not going Paleo or anything, but I do sometimes find myself eating waaaaayyy too many grains, even the whole ones.
This might be TMI, but in the past few months I've noticed I feel somewhat bloated if I eat too many grains in a day. However, I've been swapping some grains for more protein and veggies lately to avoid the bloat.
Buuuuutt I still love my oatmeal and its hearty texture. It's been the hardest grain to cut back on. Luckily, this protein-packed oatless oatmeal uses egg whites, ground flax seed and mashed banana to recreate the chewiness of a hot bowl of oats. Check out the recipe at Carrots 'N' Cake.
