Finding the time to exercise and make nutritious meals can be insanely difficult when you're juggling various responsibilities. Trust me. I know. This month is proving to be one of the most difficult of my life.
I work about 12 hours per week, have four classes left before graduation and am taking an LSAT prep class. I have to plan my days out down to the 30 minute mark. Otherwise, something falls through the cracks. Forget about free time. It doesn't exist.
I've actually fallen into the habit of skipping breakfast so I can sleep in. Breakfast is my favorite meal, but the extra sleep is much-needed. I drink a cup of coffee and generally don't eat until noon or 1 p.m. after I've gone to class or work. I still eat enough during the day. However, I find myself eating late at night, which only interrupts my sleep. It's a vicious cycle I'm sure you've experienced.

When I'm crunched for time in the A.M., I mix a packet or two with almond milk before leaving the house and call it breakfast. The packets are also great for when I know I'll be on campus for 14+ hours. I simply grab and go.
In addition to simple shakes, I made a smoothie in my new blender using one of the Vega One French Vanilla Nutritional Shake packets.
I think my eyes were a bit bigger than my stomach on this morning, but if you're feeling hungry, this Very Berry French Vanilla Smoothie will certainly fill you up. Feel free to slurp from the blender or put it in a bowl like I did. You can even add coconut butter, nuts and/or cereal if you're feeling adventurous. :)
As you'll see below, the smoothie was more like soft-serve ice cream due to the frozen fruits and yogurt. But hey, I'm not one to complain about eating dessert for breakfast.

Makes one huge smoothie in a bowl or two smaller smoothies
Total Preparation Time: 2 minutes
- 1 cup frozen blueberries
- 1 cup frozen strawberries
- 1/2 frozen banana
- 1/2 cup unsweetened vanilla almond milk
- 1/2 cup low-fat plain Greek yogurt
- 1 Vega One French Vanilla Nutritional Shake packet
- 1 teaspoon ground cinnamon
- 1 teaspoon pure vanilla extract
- 1 cup fresh spinach
- 2 tablespoons ground flaxseed
- Add all ingredients to a blender.
- Pulse for about 30 seconds if you're using a bullet blender. If you're using a regular blender, just let the blender do its thing for 30 to 60 seconds until everything is well-combined. You might have to stop once or twice to scrape down the sides.
- Drink from the blender, add to a cup or put in a bowl.
- Add coconut butter, cereal or nuts if you desire.
