Carrot Cake Overnight Oats from oh she glows



Due to their natural sweetness, carrots are my favorite vegetable. They're also versatile, portable and perfectly dippable in a number of condiments.

Despite my affinity for the orange veggie, I considered myself a true carrot cake hater until a few months ago. However, one bite of these amazingly fluffy and filling Carrot Cake Protein Pancakes from Dashing Dish made me a believer.


I went on a "pinning" spree of all things carrot cake after enjoying those flapjacks. The following recipe for Carrot Cake Overnight Oats from oh she glows found its way to my "Ode to Oats" board at some point during this madness, but I forgot about it until recently.


I know these aren't the prettiest overnight oats I've made. You'll only understand the true beauty of this chewy, cinnamon-filled breakfast if you try it for yourself.

My own mother, who knows I like trying weird, healthy recipes, gave me a confused look as I ate out of this almost-empty Barney Butter jar (a.k.a. the best container for overnight oats). Her expression turned from confused to "you're crazy" after peeking in the jar to see shredded carrots and, as she said, "those things you use to grow a chia pet."


Luckily, I don't really care what anyone thinks when I'm eating veggies for breakfast. It's an accomplishment for a person who eats breakfasts that resemble desserts every day. I'm convinced I was a pastry chef or baker in another life.

Anyway, give this batch of my favorite summer breakfast a try if you're looking to be adventurous in the a.m. If you attract a few stares or glances, tell yourself the onlookers are jealous. They just wish they could be as healthy and lucky as you to be eating cake for breakfast. :)
